Okay, so the name of this dish could use some work. But, seriously, so easy, and so delicious.
1) Cook chicken breast with mushroom, garlic, and white wine. (Instructions here and/or just cook the chicken in the skillet, pour in the wine, stir in the mushrooms and garlic, and put the chicken back in to simmer until it is done. There should be enough wine when you start to cover half the depth of the chicken.)
2) Boil water for orzo. Cook orzo. When six minutes are remaining, stir in a whole bunch of fresh spinach leaves.
3) Chop up the chicken into bite-sized pieces and stir together. And you’re done. Delicious.
