First “day” of Spring Break

While I totally count this past weekend as my spring break as far as stories go, today is the first “official” day of my week out of school!  I have a few goals for the coming week.  Health-wise, I want to eat healthily, spend time cooking and enjoying quality meals, and get in at least one yoga class and one regular workout.  Work-wise, I have to catch up on almost a month’s tax reading, take care of some outstanding filing from my clinic work, and send in new job applications.  House-wise, I have a ton of spring cleaning to do!  Over time, things pile up everywhere, and I finally have time to clean some things up/out.

Food today:  so far so good.

For breakfast, I had oatmeal (with cinnamon, brown sugar, cranberries, pecans, and skim milk) with 4 oz. of blueberry-pomegranate juice, a banana, and a mug of coffee.

For lunch, I had a turkey sandwich (turkey, spinach, tomatoes, banana peppers, and salt/pepper) and potato salad.  The potato salad is high in calories and fat, but that’s good in moderation because it helps you feel full, right?  right.  I also had a gingerbread cookie, which was delicious.  I’ve had one full bottle of water and a mug of tea to drink.

For exercise, I’ve had NOTHING.  I walked from the car to the Courthouse and back, which was maybe one block total.

Work-wise:  some preparations done, but not a ton accomplished otherwise.

I woke up early, dressed, and drove to school to pick up a new copy of my transcript and two letters of recommendation.  These documents completed my last clerkship application (which is kind of late, but I’m trying anyway), and I sealed the envelope, drove downtown to the Courthouse, and delivered the package to the mail room.  So that’s one application complete!

While at school, I also picked up the 27 packets of papers I have to read for journal.  But I haven’t actually opened or read any of them yet. . . so that’s not really an accomplishment, is it?  Well, I’m counting it as an accomplishment because (1) I hate to drive to school and (2) I can’t do any reading until I pick them up, right?

House-wise, I started the massive purge/clean of the apartment.  I think it is so crazy that such a tiny apartment can be so incredibly messy!  But, when you are too busy to sleep and workout, some things slip through the cracks.  Today, I scrubbed the stove top and washed the oven door.  Then, I emptied out our entire cupboard, cleaned the shelves, and rearranged all of our food.  This is important because (1) I hate messy cabinets and (2) it let me see everything that we have, so we don’t waste money buying unnecessary groceries.  Sometimes, my husband does the grocery shopping when I am very busy, and so I don’t always know what we have in the cabinets.  Today, I found two pounds of brown rice — guess what we’ll be having for dinner this week??

If you have any brown rice recipe suggestions, send them my way!
