Healthy Eating 101

So, I went to the grocery with Hunter this weekend and spent all of our money on easy and healthy snacks and oh, boy! did it work out yesterday.  Total caloric intake of 1285 (thanks SparkPeople for the counting tools) and no deprivation or hunger at all.  And yes, that is including my mid-afternoon latte and after-dinner cookies.

I’m not trying to lose weight or be incredibly healthy or anything honorable like that, I just really have to focus on my studies and if I eat more fruits and veggies I do better.  My brain works super fast but can carry a distraction for miles, so I have to keep it focused.  Generally, that involves munching on skittles and pretzels for my entire study period, but I can’t do that for 12 hours a day or I’ll be the size of a blimp!  So, here’ the run-down.

Breakfast: the most important meal of the day because (a) it is and (b) it’ s the only time of day when I see H.  So, it has to be quick and easy but also filling for a full day of studying.

Special K and skim milk
Two sausage links
1/2 cup of sliced strawberries
Coffee!!!!!!!

Lunch:
spinach salad [even though I hate salad!] with leftover roasted pork loin, half a tomato, and light balsamic dressing
100 calorie cheese nips
grapes

Snack:
banana
yogurt or, if I have time, a skim latte of some sort before my early class today!
Special K bar with blueberries! (my favorite!!!)

Dinner:
Healthy Choice while listening to the most boring lectures of all times (business associations oh my gosh…)
Low fat Laughing Cow Cheese
Minute Maid Light Lemonade
100 calorie Right Bites fudge stripe cookies

Seriously, it was not so bad except for the salad (yuck) and the business associations (double yuck).

    You are doing way better than me! I can never seem to get under 1600 without feeling like I’m starving. I haven’t counted calories for a while though and need to start again. You’ve inspired me!

      Right, but you are working out and I am only sitting in a chair studying my brains out, so you probably need way more calories than I do right now. . . AND I could really go for a cupcake right now. Just being honest. :) SparkPeople is awesome though — you can click in your “favorite” foods and it is really quick.
